May has finally arrived and has brought a little bit of sunshine with it. And so of course, it's time for us to bring out the freshest ingredients and recipes, and embrace the delicious flavours of the warmer months. This week, we're bringing you a quick spring salad by Magdalena, a Starseeds team member and vegan recipe creator over on GetInspired.Mag
This zesty salad contains crunchy vegetables and the citrus zing of blood oranges and lime - and it takes less than 15 minutes to prepare. A beautiful healthy vegan recipe for busy people.
Quick Spring Salad with Red Cabbage and Blood Orange
- Chop the red cabbage finely and place it in a big bowl. Cut the carrots into thin slices, dice the orange and place it in the bowl with cabbage.
- Add chopped parsley and mint, roasted pumpkin and black sesame seeds and crumble the pistachios. Squeeze the lime, pour some olive oil and, both salt and nigella seeds and mix everything together.
- Leave it for an hour to allow the flavours to develop..
- Serve alone or with beluga lentils.
